Gray Monk makes this Brut Rose in the traditional method (like Champagne) from the grape varieties Gamay and Pinot Meunier.
It's a salmon-pink bubbly with copper glints and fresh aromas of cherries, tangerine peel, peach stone, dried herbs and crisp red apples. It has a pleasing mousse and attractive expressive fruit; a kiss of sweetness highlights its red apple, cherry and honey flavours. Juicy and wonderfully approachable.
It's off-dry and will pair nicely with salmon, soft and mild cheeses, turkey, mildly spicy dishes or most appetizers.
